Peas & Crayons started WIAW and I am excited to start sharing my Wednesday eats.
Today I had a rough start to my day, but I managed to grab a protein muffin before I headed out the door to teach water aerobics.Banana Pumpkin Protein Muffin got me through class.
Since my class was only an hour long I was able to hurry back home and finish my breakfast. 1 whole egg and 3 egg whites with veggies it never gets old. Pumpkin spice coffee with coconut milk and stevia to complete the meal.
Lunch was left over crockpot salsa chicken with black beans and corn served on a corn tortilla with raw veggies and strawberries
After lunch I did some work and then my afternoon snack attach came. This usually happens around 3pm. I turned to my favorite easy snack. Greek yogurt, strawberries, chia seeds and granola.
I had to teach again this evening so I was headed back to the gym after my afternoon snack to teach and do shoulder workout. Afterwards I stopped at Trader Joe’s to pick up a few things and grabbed a quick dinner. Salad it is.
I then headed to a craft night that my moms group was hosting. We did a fall wreath and snacked on fruit, veggies, cookies and wine:)
Although my day started off rough it turned into a great day and the best part is I get to finish the night with this…
Anyone else addicted to Pumpkin this season?
Can u tell me how u are doing your eggs? What veggies and how r u cooking them? I just eat plain egg whites and oats every morning and its dull. Not to mention I cld use the veggies. Also, what granola do u recommend? I too love Greek yogurt with a little granola in it, but I’m afraid mine isn’t clean. Thx!

For my eggs I usually do 4 egg whites or 1 whole egg and 3 egg whites. I add seasonings and scramble on stove with 1tsp olive oil. I then toss in whatever veggies I have. I love granola so I don’t really buy one brand, I try to make sure there are not a lot of ingredients and I only use about half the serving on my yogurt. Making your own would be you best option if you want clean granola.
So do you sauté your vegetables separately? Or cook them somehow before you throw them in the scrambled eggs?

I actually do both but most of the time I sauté first then add eggs.
