Are you tired of pumpkin yet? I’m not! I had another can of pumpkin left and decided to make Pumpkin Protein Pancakes yesterday after a hard leg workout. I did Jamie Eason’s Phase 2 day 44 workout and boy can I feel it this morning. Banana Pumpkin Protein Muffins
Ingredients:
- 1cup old fashioned oats
- 1/2cup oat flour
- 2 scoops vanilla protein
- 1 Banana mashed
- 1/4cup all natural applesauce
- 1/4cup egg whites
- 1/4cup pumpkin puree
- 1tsp baking powder
- 1tsp baking soda
- 1 tsp cinnamon
- 1 tsp pumpkin spice
Mix wet and dry ingredients separate. Slowly add dry ingredients to wet and mix. Spray muffin tins with olive oil and add mix to pan. Bake at 350 degrees for 15 minutes. Makes 8 Muffins
