The lovely people over at Sunshine Burgers sent me some of their Black Bean Southwest Burgers to tryout and review. When the burgers arrived in the mail it was around lunchtime, so I wasted no time grilling these for a quick lunch. People who know me know I am a huge fan of anything Mexican, I could seriously eat it every day. These burgers had a southwest flavor with added jalapeño, black bean, and cilantro. This was my first time having a pre-packaged black bean burger and I was quite surprised how good they were. They were very flavorful with a little spicy kick and a soft texture. They also offer some great nutritional stats such as:

After grilling up the black bean burgers I created a healthy summer salad for my family to enjoy for lunch. It was simple, quick and easy. This salad is great for the entire family and even my 3 year- old loved them. Click here to locate a store near you to find all of Sunshine Burgers.

Summer Black Bean Southwest Burger Salad

Ingredients:

1 Black Bean Southwest Burger

2 cups mixed greens

1 Tbsp salsa

cilantro 

1 tsp olive oil

Coat aluminum foil with olive oil and place on hot grill. Place burger onto and grill each side for 3-5 minutes. Add burgers to a bed a mixed greens and add remaining toppings. Enjoy!
