This past weekend I enjoyed time with my family and friends hanging by the beach and exploring Charleston. I always love having visitors, because it feels like vacation for me too. On the fourth of July we enjoyed the beach for a few hours and then watched the fireworks by the water. For dinner I decided to keep it simple and through some chicken and BBQ sauce in the crockpot before we left for the beach. When we returned it was done, that simple.
For dinner we had BBQ pulled chicken sliders, corn on the cob and baked beans. By the second day of having left overs I was ready to move on. Since I was feeding eight people I still had a lot of chicken left over so I decided to make some nachos. When you make a dish and don’t want the exact meal the next day, get creative and change up the recipe a bit. It’s a nice change without wasting food.
Crockpot BBQ Pulled Chicken
Ingredients:
7 chicken breast
1 bottle of BBQ sauce
3 Tbsp water
2 Tbsp brown sugar
Combine all ingredients in crockpot and cook on low for 8 hours. Once done removed chicken from crockpot and shred with a fork.
BBQ Pulled Chicken Nachos
1/2 cup pulled bbq chicken
handfull of tortilla chips
1/3 cup shredded
cheese
1 Tbsp greek yogurt
1 Tbsp salsa
Place tortilla chips in a oven safe dish, add cheese and chicken and cook until cheese is melted. Add topping and enjoy!

Looks great! I love using Thanksgiving leftovers to make all different kinds of combinations of meals. Turkey and ham sandwiches, potato pancakes, etc. I also love adding leftover chicken, beans, veggies, etc. to add to salads or even omelets!

Nooo unfortunately they’re not. I’ve never actually made them but Greg and his dad do. I think it basically involves mixing leftover mashed potatoes with flour and cooking them on the stove like pancakes! They’re not sweet like traditional pancakes, but still a fun alternative!
