This past weekend my little guy turned 3! It’s crazy how time flies. We celebrated his birthday at a local fire station. He had a blast and it was a big hit with all the kids! My son has had plenty of treats and cupcakes so for his school birthday celebration I wanted to keep it healthy. He attends school from 9am-12pm, so I thought muffins would be a great treat. These turned out great and I think the class will enjoy them!

Ingredients
  1. 1 1/2 cups oat flour
  2. 1 teaspoon baking powder
  3. 1/2 teaspoon baking soda
  4. 1/4 teaspoon salt
  5. 1 teaspoons ground cinnamon
  6. 1/2 cup unsweetened lowfat milk
  7. 1/3 cup sucanat
  8. 1 mashed very ripe banana
  9. 1/4 cup applesauce
  10. 1 teaspoons pure vanilla
  11. 1/3 cup semisweet mini chocolate chips
Instructions
  1. 1. Mix all dry ingredients in a mixing bowl.
  2. 2. Mix all wet ingredients in a mixing bowl.
  3. 3. Add wet ingredients to dry and mix until well blended.
Notes
  1. Grease cupcake pan or use cupcake liners and bake for 18 minutes at 350 degrees
