This past weekend my little guy turned 3! It’s crazy how time flies. We celebrated his birthday at a local fire station. He had a blast and it was a big hit with all the kids! My son has had plenty of treats and cupcakes so for his school birthday celebration I wanted to keep it healthy. He attends school from 9am-12pm, so I thought muffins would be a great treat. These turned out great and I think the class will enjoy them!

Ingredients
- 1 1/2 cups oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoons ground cinnamon
- 1/2 cup unsweetened lowfat milk
- 1/3 cup sucanat
- 1 mashed very ripe banana
- 1/4 cup applesauce
- 1 teaspoons pure vanilla
- 1/3 cup semisweet mini chocolate chips
Instructions
- 1. Mix all dry ingredients in a mixing bowl.
- 2. Mix all wet ingredients in a mixing bowl.
- 3. Add wet ingredients to dry and mix until well blended.
Notes
- Grease cupcake pan or use cupcake liners and bake for 18 minutes at 350 degrees
