Many of you know I don’t like Leg Day and the only thing that gets me through the workout are my post workout Protein Pancakes. Yep I will squat for Pancakes! I have more carbs on these days as I am working a big muscle group and burning more calories. So yesterday I threw together a new pancake recipe in hopes of it turning out good and well I loved them and so did my husband.
Coconut Banana Pancakes1/2 cup coconut flour 1/2 cup rolled oats 1/2tsp baking soda 1/2tsp baking powder 1 scoop vanilla protein powder ( I used MRM brand) 1/2tsp cinnamon pinch of salt 1 ripe banana 1Tbsp plain greek yogurt 1 cup almond milk 1 egg white 1. Place all ingredients into a blender ( I used NutriBullet). Blend until all ingredients are well blended. 2. Pour pancakes onto a skillet with coconut oil. 3. Top pancakes with unsweetened coconut. Makes 6 pancakes ( I eat 3)

So I made these for my kids (without the protein tho) and they just fell apart when I flipped them.. and I cooked them for so long and theyre still soft in the middle, what gives???????
Oh no I’m sorry that happened Candice. Coconut flour can be tricky sometimes. Not sure how they turn out without the protein powder. I am in the process of working on a kid friendly pancake and waffle so stay tuned:) Are your kids gluten free?
