As I prepare some homemade gifts for my son’s teachers I can’t help but think about the tragedy that happened at Sandy Hook. My heart continues to ache for the families. I will continue to pray and be thankful for teachers, because they truly are heroes.

For his teachers gifts I decided to turn a clean cookie into a naughty and nice cookie. A little clean and a little not so clean. One of the ingredients calls for dark chocolate, but when I saw dark chocolate M&M’s I couldn’t resist. I thought the red and green would make them a little festive. This recipe is from the Clean Eating Magazine Cookbook and I recommend them to everyone looking for a clean cookie.

Almond Butter Chocolate Chip Cookies

INGREDIENTS:

  • 1 cup unsalted almond butter, stirred well
  • 3/4 cup Sucanat
  • 1 large egg
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 3 oz dark chocolate (70% cocoa or greater), broken into small pieces ( I used 1/2 cup dark chocolate M&Ms)

INSTRUCTIONS:

  1. Preheat oven to 350°F. In a medium bowl, stir together first 5 ingredients until blended. Stir in chocolate.
  2. Drop dough by rounded tablespoonfuls onto parchment-lined baking sheets. Bake for 10 to 12 minutes or until lightly browned. Let cool on baking sheets for 5 minutes. Remove to a wire rack and let cool for 15 more minutes.
