The truth hurts! When you hear the truth you can either let it hurt you or motivate you. This applies to all things in life. In my case I have used it for motivation. Here is the truth my husband recently told me after tasting my Apple Cinnamon Granola, “Wow I could really eat this”. I was a bit confused, what do you mean you could really eat this!? What about all the other recipes you have taste tested and raved about how good they were? Was he just telling me this not to hurt my feelings?

The truth is my husband likes sweets. In my opinion my protein muffins and protein cookies are not really sweet. When tasting these he was looking for a sweet dessert taste. Now that the truth is out I wanted to create a clean sweet recipe for him. If you like muffins and have a sweet tooth you will love these. They are very moist and go great in the morning with coffee.

Vegan Banana Nut Muffins

Ingredients
Dry:
1 1/2C Oat Flour ( Grind Oats in food processor)
1/4C Organic Sucanet (found at Whole Foods Market)
1tsp Pumpkin Spice
1tsp Cinnamon
1/2tsp Baking Soda
1/8tsp Sea Salt
1/8C Walnuts
Wet:
1 Over rip Banana mashed
1/4C Natural Apple Sauce
1tsp Vanilla
1Tbsp Coconut Oil
1.Combine all dry ingredients and mix in food processor and set aside. 
2.Mashed banana and add in rest of wet ingredients.
3.Mix wet and dry ingredients together.
4.Spray muffins tins with olive oil and pour in mix. Cook 
for 15 minutes at 350 degrees.
Makes 7 Muffins
