Okay I’ll admit it. I’m ready to move on from Pumpkin. There I said it! Since I am taking a break from pumpkin it’s only natural to start a new obsession… APPLE! I decided to start my apple craze off with yummy protein muffins. Muffins are great for on- the- go breakfast, pre -workout, post-workout and small meals. They are a staple in my house and I eat them every week. I hope you enjoy them:)
Apple Cinnamon Cranberry Protein Muffins
Mix Dry Ingredients: 1 1/2 cup dry rolled oats 1/2 cup oat flour 1 scoop vanilla protein powder 1 tsp baking soda 1 tsp baking powder 1 Tbsp cinnamon 1/3 dried cranberries ( may use raisins) Mix Wet Ingredients: 1 cup almond milk 1/3 cup egg whites 1/4 all natural apple sauce 1 tsp vanilla extract 1 tsp almond extract 1 small apple diced Directions: Add wet ingredient mix to dry mix and stir together. Add mix to cupcake paper lined cupcake pan. Bake at 350 for 15-17 minutes. Makes 10 muffins. Nutritional Info: Serving size=1 112 Calories 20g carbs 7g sugar 6g protein *nutritional info may vary*
