I’m pretty sure I dreamed about this combination last night, because when I woke up I had to have it. Since I’m not teaching any classes today I knew I could take my time with breakfast, which almost always includes a bowl of oatmeal. I haven’t always been a fan of oatmeal though. I use to have my husband make it, I just wasn’t good at it. It was either too mushy or dry. It took awhile, but I finally figured it out and when I have time to make it, I go BIG. The more toppings the better! Kinda like frozen yogurt, but that’s another post:) I received my first jar of PB2 chocolate yesterday and was anxious to try it out. I found it on Amazon for $4. I still love my all natural peanut butter and almond butter, but I think this will be a great alternative to adding flavor to shakes, oatmeal, greek yogurt or cereal. PB2 has less fat and calories than peanut butter or almond butter and comes in the form of powder. Since healthy fats are important I will not be giving up my almond butter anytime soon.

 

  • 1/2c  Rolled Oats
  • 1/2c Almond Milk
  • 2 Tbsp PB2 chocolate
  • 1 Tbsp chopped pecans
  • 1 Tbsp unsweetened coconut flakes
  • 1/4 cut banana

Place oatmeal and almond milk in microwave for 1 minute. Add remaining ingredients and stir.

This Oatmeal was probably the most filling I have had. I loved the taste of the peanut butter and chocolate with a hint of banana. Great meal to start my day with. Since my husband didn’t go into work until 10am he got up with Jeremiah and made him breakfast. Today he had a banana, whole wheat waffle and raisins. My husband rushed out the door with a bowl oatmeal and mango.
