Quick post before I leave for Hilton Head this weekend. This is my first time and I’m very excited to have a little break. It’s only a 2 hour drive so I should be able to study while my husband drives, then I can relax when we arrive. There is nothing better than a little beach getaway! Oh wait I live 5 minutes from the beach, but I have never been to this one ,so It will be a new experience. Before I can even attempt to go on vacation I had to plan some of my meals. The main meals I like to have planned our breakfast and snacks/small meals. Most people do not eat 6 times a day like I do so I have to be prepared. For breakfast I prepared Protein Banana Nut muffins (Recipe coming soon). They are so filling and yummy. For snacks I have rice cakes, tuna, greek yogurt and homemade granola. I love granola and have been meaning to make my own, so that is what I did. It is really easy and will be great with my yogurt.

Homemade Granola
1 1/2 cup rolled oats
1/4 cup almonds
1 tbsp chia seeds
1 tbsp flax seeds
1 tsp cinnamon
1 tsp pumpkin spice
Wet:
2 tbsp raw almond butter
2 tbsp raw honey
Preheat over to 350 and line baking sheet with parchment paper. Mix all dry ingredients and wet separate. Heat web ingredients on stove until it is boiling. Quickly add to dry ingredients and stir until all oats are covered. Pour on baking sheet and cook for 20 minutes. Serving size= 3 cups
Enjoy with greek yogurt, oatmeal, cereal or even eat it plan. Have a great weekend!
Made this and took it out of the oven about 30 minutes ago. It’s delicious! Can’t wait to throw it in my yogurt with some fresh fruit. Thanks for sharing!
